  • 2/3 cup rice
  • 1 poblano pepper
  • 4 spinach leaves
  • 1 onion (small)
  • 1/2 cup parsley (and coriander leaves and stems, equal portions)
  • 1 1/3 cups water
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon garlic powder

    Directions

    1. Let the rice soak in hot water for 10 minutes. Strain and clean the rice until the water comes out clear. Set the rice aside
    2. Clean and remove the seeds from the poblano pepper and cut into thick strips.
    3. Cut the spinach into thick strip, the liquefy the spinach, onion, parsley, and coriander in a food processor.
