- 1 1/4 cups coconut milk (canned, I use regular; could use light)
- 1 tsp. kosher salt
- 2 Tbsp. olive oil
- 1/2 yellow onion (a medium, minced)
- 1 1/2 cups long-grain white rice (could use brown rice; see notes)
- 1 clove garlic (minced)
- 2 Tbsp. lime juice (freshly squeezed)
