- 8 pancakes
- 200 grams wholemeal flour
- 500 mL milk
- 1 egg
- 1 pinch salt
- water (Little bit of still)
- 1 jar green pesto
- 3 mozzarella cheese (balls, thickly sliced)
- 500 grams cherry tomatoes (halved)
- sunflower oil (for frying)

Directions
- Preheat the oven to 180°C (350°F), gas mark 4.
- 1. Place the flour in a large bowl, mix in the eggs, pinch of salt and gradually whisk in the milk and a little bit of water to give a smooth batter.
- 2. Heat a lightly greased non-stick frying pan.
