- 1 medium carrot (julienned, for color; this is optional)
- 3 garlic cloves (medium, minced)
- 2 Thai chili peppers (small, minced, or to your taste!*)
- 1/2 cup lime juice
- 1 1/2 cups coconut water
- 3 Tbsp. maple syrup
- 3 tsp. sea salt (Himalayan, can adjust according to your taste)
- 3/4 cup Thai basil (cut into a chiffonade)
- 1/3 cup peanuts (crushed)
- 1 Thai chili pepper (minced)
