- 2 heads lettuce (fancy)
- 1/4 fennel bulb (mandolined or finely sliced)
- 2 cucumbers (Lebanese, mandolined or finely sliced)
- 1 avocado (finely sliced)
- 1 handful toasted almonds
- 225 grams halloumi (each packet provides about 4 decent slices of halloumi, use 2 packs for a larger group)
- 2 handfuls herbs (whatever you have on hand, I used half basil and half dill)
- sea salt flakes
- cracked pepper
- lemon juice
- olive oil
- salad
- pesto (As much vegan, as you see fit)
- pitted olives (optional, I used Sicilian)
- 100 grams arugula (rocket)
- 1 lemon
- 1 cup toasted almonds (you could also use pine nuts)
- 1 cup olive oil
