- 1 inch cucumber (section of, sliced thin)

- pickles (to taste, slice larger store-bought pickles into thin strips if necessary)
- 7 carrots (medium to large, 3/4th to 1 pound carrots)
- 1 red onion (small to medium, about ½ pound)
- 1 cup white vinegar (plain, or white wine vinegar or apple cider vinegar)
- 1 cup water
- 1/4 cup honey (or maple syrup or sugar of choice)
- 2 1/2 tsp. salt
- 1/2 tsp. red pepper flakes (optional)
