- 2 slices bread (we used a white bread, but one filled with lots of different whole grains and seeds would be *awesome*)
- 3 Tbsp. pesto (Green Goddess Herb, recipe below)
- 2 slices cheese (mild white melty, like mozzarella)
- baby spinach (handful fresh)
- 1/4 avocado (sliced)
- 2 Tbsp. goat cheese (crumbled)
- olive oil (and butter if you’re so inclined)
- 1 clove garlic
- 1 anchovy fillet (or 2 if you’re ballsy, in oil)
- 1/2 shallot (small, chopped, about 1 tablespoon)
- 1 tsp. lemon juice
- Italian parsley (handful chopped fresh)
- kale (handful chopped)
- 3 Tbsp. fresh tarragon (chopped)
- 1 Tbsp. chives (chopped)
- 1/4 cup olive oil
- salt
- pepper
