- 2 1/2 cups Monterey Jack cheese (or grated Oaxacan, or a mix)
- 2 cups queso fresco (crumbled)
- 4 scallions (thinly sliced, 3/4 cup)
- 1 cup cilantro leaves (coarsely chopped, and tender stems, from about 1 bunch)
