  • 1 tablespoon oil
  • 1 onion (halved, sliced)
  • 2 tablespoons green curry paste
  • 13 1/2 ounces coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 large potato (peeled, chopped)
  • 5 ounces green beans (frozen cut)
  • 3 1/2 ounces rotisserie chicken (chopped)
  • 1/2 lime (juiced)
  • 18 ounces basmati rice (cooked)
  • cilantro leaves (fresh, to serve)

    Directions

    1. Heat oil in a saucepan over medium heat. Sauté onion for 3-4 mins, until tender. Add curry paste and cook, stirring, for 1 min, until fragrant. Add coconut milk, 1/2 cup water, fish sauce and brown sugar. Bring to a boil, stirring. Add potato and green beans. Reduce heat to low and simmer, stirring occasionally, for 15 mins, until potato is tender.
    2. Remove from heat and stir in chicken and lime juice. Simmer for 1-2 mins, until heated through. Serve with basmati rice. Garnish with cilantro.
