- 1 Tbsp. olive oil
- dried oregano (ground)
- dried basil (ground)
- 1/2 tsp. garlic powder
- salt
- ground black pepper
- 3 zucchini (medium-sized)
- 2 tomatoes (sliced)
- 6 black olives (chopped)
- 1/4 cup goat cheese (crumbled)
- 1 tsp. olive oil
- 1 tsp. balsamic vinegar

Directions
- Mix the olive oil with a pinch of oregano, a pinch of basil, and the garlic powder. Add salt and pepper to taste and set aside.
- Cut the zucchini into sticks, then cover with the oil mixture and pan-sear on a hot skillet. Turn the zucchini over every 3 minutes to cook on all sides. Remove and let cool.
- Cut into medium pieces and mix with the tomatoes, olives, and goat cheese.
- Mix the ingredients for the vinaigrette together to obtain a smooth and even mixture.
- Dress the salad, mix carefully, and serve.
