- 4 pork sirloin chops (boneless, my pork weighed 1 1/2 pounds before trimming)
- 1/4 cup olive oil
- 1/4 cup lemon juice (fresh squeezed)
- 2 tsp. red wine vinegar
- 1 tsp. lemon zest (fresh, or use 1/2 tsp. dried lemon peel)
- 2 tsp. oregano (dried Greek, You can also use 2 T minced fresh Greek oregano, but I often use dried herbs in a marinade like this.)
- 2 tsp. garlic (minced fresh, or use 1 tsp. dried granulated garlic)
- ground black pepper (fresh, to taste, I used about 1/2 tsp.)

Used this last Thursday, turned out ok maybe needed to marinate longer. Found it lacking a little. May try it again in the future,

Only had 3 hours to marinade the steaks - it was still wonderful! The lemon and oregano flavors really came through. I did them on the gas grill- the "charred" flavor added an extra profile. Served them with grilled eggplant and arugula salad with a mustard/ lemon vinaigrette- yumm!
