- 2 oz. grana padano cheese (grated, plus 1 tbsp for topping)
- 2 oz. cheddar cheese (finely grated strong, or feta cheese, crumbled)
- 2 large eggs (lightly beaten)
- grated nutmeg (large pinch freshly)
