- 1 summer squash (Yellow/, cut into 1/4 inch thick coins)
- 10 sweet peppers (see notes)
- 1 red onion (cut into thick slices)
- 4 Tbsp. marinade (Greek, see notes)
- 1 Tbsp. butter oil
- 2 cloves minced garlic (about 1 tbsp)
- 4 sprigs fresh thyme (divided)
- 1 corn kernels (removed with a sharp knife)
- 1/2 cup grape tomatoes (about 8-10 tomatoes)
- 1/2 red onion (thinly sliced)
- 16 oz. orzo pasta (see notes)
- 2 Tbsp. red wine vinegar (adjust according to your liking)
- 2 Tbsp. chopped fresh basil
- 1/2 Tbsp. chopped fresh rosemary
- 1 Tbsp. Italian seasoning (or Greek)
- salt
- pepper
- 1/4 cup crumbled feta (optional)
- extra virgin olive oil (to drizzle, optional)
