- 1 bell pepper (chopped)
- 2 cups chopped tomatoes (about 2-3 tomatoes)
- 1/2 English cucumber (peeled and seeded, chopped)
- 3/4 cup red onion (finely chopped)
- 1/2 cup chopped parsley
- 1/4 cup mint (chopped)
- 1 cup Kalamata olives (pitted and chopped)
- 1/2 cup crumbled feta cheese (omit for vegan version)
- lemon dressing
- 1/3 cup extra-virgin olive oil
- 1 garlic clove (minced)
- 1/4 cup fresh lemon juice
- 3/4 tsp. salt
- 1/2 tsp. freshly ground black pepper

Excellent!! The lentils add a nice flavor and texture. I didn't use the suggested potato mix but boiled my own and added garlic to the recipe. Of course feta is always a hit and the lemon dressing - perfection!
