- 6 cups vegetable stock (water can be used also)
- 1 onion (large, chopped finely)
- 4 garlic cloves (chopped finely)
- 3 stalks celery
- 28 oz. diced tomatoes (good quality)
- 1/2 cup red wine
- 2 bay leaves
- 2 Tbsp. fresh parsley (chopped, oregano, basil, and mint or 1 tsp. dry of each)
- 1 1/2 tsp. salt
- freshly ground black pepper
- 1/3 cup olive oil (good)
- 1/4 cup red vinegar
- sour cream (optional)
