  • 1 whole chicken (about 4 pound, cut in sections)
  • 4 pounds bone (chicken thighs, in, skin-on)
  • 3 russet potatoes (cut in quarters)
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon dried rosemary
  • 1 dried oregano (rounded tablespoon)
  • 1 pinch cayenne
  • 6 cloves garlic (finely minced)
  • 1/2 cup fresh lemon juice
  • 1/2 cup olive oil
  • 2/3 cup chicken broth (for the pan, plus a splash to deglaze after roasting)
  • oregano (fresh chopped, to garnish, optional)

    Mixed reviews.......POSITIVE: Tons of flavor and chicken was juicy! Added a little basil and thyme, otherwise followed directions exactly. Made sure to marinate the chicken/potatoes for 4 hrs!!!! NEGATIVE: Picky kids...some liked the potatoes but not the chicken and others liked the chicken but not the potatoes.😏 Have decided to try this recipe the next time using chicken breast and baby potatoes. Also, you could use the marinade and then grill the chicken!😋

    I try to make this at least every two weeks. All the flavors I crave. So good!
    Awesome. I marinated it in the fridge for about 4 hours and then roasted it in the oven as directed and browned the potatoes. It was absolutely delicious.

    This is good, but the recipe provides basically zero guidance on how to put this together. I used a roasting pan and removed the rack, cooked the chicken and potatoes uncovered. I cooked just chicken thighs that had the skin-on and were about 2 lbs. I mixed the dry ingredients, decreasing the salt by half. I sprinkled the chicken and potatoes with the dry ingredients. Then I mixed the wet ingredients, including the minced garlic. I drizzled this over the chicken. I cooked the chicken and potatoes about 35-40 minutes. It was delicious when cooked this way.

    Really tasty. Used some aleppo pepper instead of cayenne. Also, I cooked the chicken on a rack above the potatoes - this allowed it to get super crispy while still getting the flavour from the chicken in the potatoes.

    Cooked it on a skillet (don’t have an oven) with chicken breast and Yukon gold potatoes - amazing! Cooked the chicken and potatoes until brown and Crispy and then added in the broth and the lemon juice together and let it simmer.

    Delicious!! The only thing I suggest is to NOT let it cook as long as they say, otherwise the "sauce" turns oily. Great taste and the chicken is super moist.

    I made this tonight and it was amazing!! I have been using a similar recipe that I saw on a Cuban cooking show (yep, lemon, garlic, salt, pepper, oregano and olive oil!) but instead of a marinade it was more of a rub...and served with rice instead of potatoes. We love it because my family can never have enough lemon! Nothing has been able to even come close to the wonderfully intense flavor of that chicken, until tonight!! I used a sheet pan since my roasting pan is much deeper, making it harder to get that carmellized crispy skin without over cooking the meat. It was perfect! And if someone didn't want potatoes, just leave them out and serve that wonderful sauce over some rice or quinoa! If it's too greasy, use a fat separator or spoon some off.

    Turned out great but this recipe shouldn't include 4lbs meat bones - I think y'all made a typo. It's just 4lbs of chicken either whole or pieces
