Description
Skordalia is a traditional Greek dip/sauce/spread (you choose!) made with crushed garlic and a puree of potatoes, almonds, walnuts or other thick base. This recipe for homemade Skordalia uses ground almonds and a slice of white bread as its thick base agent for the puree. Seasoned with lemons and chopped garlic, this dip can be served with pita bread for a tasty Mediterranean appetizer. Preparation is made easy by combining all the ingredients in a food processor, first the dry and then the wet, the order is important.
Ingredients
- 100 grams ground almonds
- 1 slice white sandwich bread
- 2 cloves garlic (chopped)
- 1/2 lemon
- 150 mL olive oil
- salt
- black pepper
- 100 mL hot water
Directions
- Place all the ingredients, except the oil and water, in a food processor and blend thoroughly.
- With the machine still operating, add the oil, a little at a time, until there are no lumps.
- Add the water and mix for a few more seconds.
- Leave to cool in the refrigerator and serve with pita bread.
