- 1 3/4 lb. chicken tenderloins (or up to 2 pounds of chicken tenders)
- 1 Tbsp. garlic (minced)
- 1 Tbsp. white wine vinegar (can sub distilled white vinegar or apple cider vinegar)
- 3 Tbsp. fresh lemon juice
- 2 Tbsp. extra virgin olive oil
- 3 Tbsp. plain Greek yogurt
- 2 Tbsp. dried oregano
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 Tbsp. olive oil (for cooking the chicken)
- 1 batch tzatziki sauce (homemade)
- 6 pita breads (warmed, can do this on a skillet by heating both sides or in the oven at 250°F on a baking sheet for 10 minutes.)
- 3 tomatoes (sliced)
- 1/2 red onion (thinly sliced)
- baby spinach (or lettuce, optional)
