  • 2 cloves garlic (peeled and chopped finely)
  • 1 1/4 cups greek yogurt
  • 1 head cabbage (cut into thin strips)
  • 2 teaspoons sugar
  • 8 tablespoons white wine vinegar
  • 1 red bell pepper (deseeded and cut into thin strips)
  • 1 yellow bell pepper (deseeded and cut into thin strips)
  • 1 cucumber (halved and thinly sliced)
  • 1/4 pound kalamata olives
  • 6 sprigs flat leaf parsley (thinly sliced)
  • 4 tablespoons olive oil
  • 2 tablespoons canola oil
  • 1 pound ground beef
  • 2 tablespoons spice (Gyros)
  • 1 onion (peeled, halved and thinly sliced)
  • green peppers (pickled, to garnish)

    Directions

    1. Mix garlic and yogurt then set aside. Combine cabbage with sugar and vinegar and season to taste then set aside for 30 mins to marinate. Add bell peppers, cucumber, olives and parsley. Season with olive oil.
    2. Heat canola oil in a large skillet, brown ground beef, stirring. Season with gyros spice then add to salad along with onions. Season salad to taste then garnish with seasoned yogurt and pickled green peppers. Serve remaining yogurt on the side.
