- 2 cups cooked quinoa
- 1 hothouse cucumber (English, sliced or spiralized)
- 1 cup pitted kalamata olives (drained)
- 2 medium tomatoes (cut into wedges, or 1 cup cherry tomatoes, whatever kind looks good!)
- 1/2 red onion (thinly sliced)
- 2 avocados (pitted, peeled and sliced)
- 1 cup marinated artichoke hearts (drained)
- 15 oz. garbanzo beans (/chickpeas, drained and rinsed)
- 2 Tbsp. chopped parsley (fresh)
- 1 shallot (small, diced)
- 1 clove garlic
- 1 Tbsp. lemon juice
- fresh mint leaves
- halloumi cheese
- pita bread (for serving)

- tzatziki (optional)
- dressing (optional)
