- 2 zucchini (medium-sized, ends trimmed)
- 6 carrots (medium-sized, peeled, halved lengthwise and cut into 2-inch lengths)
- 3 idaho potatoes (peeled and cut into quarters)
- 8 oz. white turnips (small, peeled and quartered)
- 3 yellow onions (small, peeled and halved)
- 3 tomatoes (ripe large, cored and quartered)
- 1 cup chickpeas (rinsed)
- 1 cup prunes (pitted, halved)
- 1/2 cup golden raisins
- 4 Tbsp. chopped cilantro (or parsley)
- 8 cups couscous (cooked, 2 2/3 cups dried, hot, optional)
