- 6 slices bacon (chopped)
- 1 lemon (quartered)
- 1 tsp. dried thyme
- 1 tsp. garlic powder
- 1 tsp. coarse sea salt
- 2 cups seedless red grapes
- 1 yellow onion (medium, thinly sliced)
- 1 shallot (minced)
- 2 cloves garlic (minced)
- 8 oz. mushrooms (sliced, I used Baby Bella mushrooms)
- 1 Tbsp. canned pumpkin
- 1/2 cup white wine (you can also use broth or white wine vinegar)
- 1/4 cup full fat coconut milk
- 3 sprigs fresh thyme
