- 1 medium onion (diced)
- 2 garlic cloves (minced or grated on a microplane grater)
- 1/2 tsp. fresh thyme leaves
- 3/4 tsp. chopped fresh sage
- 3/4 tsp. chopped fresh sage
- 1/4 tsp. dried sage
- 1/4 tsp. black pepper
- 3 medium potatoes (peeled and diced, Yukon Gold are recommended)
- 16 oz. sauerkraut
- juices
- 1 lb. kielbasa (beef, cut into 1/2” pieces, I used Hillshire Farms)
- 2 Tbsp. yellow mustard
- 1/4 cup honey dijon mustard
- 1/4 tsp. cayenne
- 1 1/2 tsp. horseradish
- 1 pinch kosher salt
- 1 pinch black pepper
