- 1 1/2 cups blanched almond flour (I prefer Honeyville brand)
- 2 Tbsp. honey (or maple syrup)
- 1/4 cup coconut oil (melted)
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- 1 whole meyer lemon (organic, washed, organic or unsprayed)
- 3 Tbsp. honey (or maple syrup*)
- 1/3 cup Meyer lemon juice (freshly squeezed, approx 2 additional lemons)
- 4 eggs (large farm fresh brown, at room temperature)
- 4 tsp. arrowroot starch (tapioca starch or corn starch would also work)
- 1/4 tsp. salt
- 3 Tbsp. coconut oil (melted, make sure it isn’t too hot when you add it in, you don’t want it to cook the eggs)
- powdered sugar
- unsweetened shredded coconut
