These were very good and easy to make. My two and three year old scarfed theirs up. I thought it was very filling for being grain free. I used my vitamix and it gave it a great consistency, I also baked them for 15 minutes. The blender was a bit harder to clean out than usual, but not too bad. Next time I will add a small amount of flax meal to make them feel like whole grain muffins and try a few mini chocolate chips on top for a splurge.
