- 100 grams pumpkin (finely shredded and put in ice water)
- 100 grams green papaya (finely shredded)
- 15 grams galangal (grated, replaceable with 10 gr Ginger)
- 50 grams purple cabbage (finely shaved)
- 50 grams micro greens
- 30 grams green apple (grated)
- 60 grams banana flower (thinly cut and put in ice water with a slice of lemon, if you can’t find fresh, it can be left out)
- 10 grams lemon grass (thinly sliced)
- 40 grams bean sprouts (cleaned and put in ice water)
- 2 lime leaves (replaceable with lime zest)
- 80 grams rocket (Wild)
- 20 grams shallots (Purple)
- 10 grams celery leaf (washed put in ice water)
- 10 grams tamarind paste
- 10 grams palm sugar
- 1 Tbsp. extra-virgin olive oil
- 80 grams cashew nuts (soaked for about 1 hour, if on the AIP replace with Coconut Cream)
- 70 grams fruit (Longan, replaceable with fresh mango)
- 5 grams garlic (crushed to a paste)
- 2 red chili (avoid if on the AIP)
- 5 grams sesame seeds (avoid if on the AIP)
