- 2 cups cake flour (not self-rising)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 tsp. ground cinnamon
- 4 large eggs
- 1/4 cup milk
- 1 tsp. vanilla extract
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup canola oil (I used coconut oil and it worked just fine)
- 3 cups shredded carrots (finely)
- 1 cup toasted walnuts (finely chopped, make sure they are chopped finely! I used regular chopped and they were a bit bulky in the cupcake)
- frosting
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 1/2 cups milk
- 1 1/2 tsp. vanilla extract
- 1 cup unsalted butter (2 sticks cut into 1 inch pieces)
- 8 oz. cream cheese (softened, cut into 1-inch pieces)
