Ingredients

- 200 grams golden syrup
- 2 Tbsp. ginger syrup (from the stem ginger jar)
- 110 grams unsalted butter
- 50 grams stem ginger (approx 3 balls, – chopped as finely as possible)
- 130 grams sultanas
- 110 grams muscovado sugar (– I used half light, half dark)
- 250 grams self raising flour
- 3 tsp. ground ginger (– I like it hot, use 2 teaspoons if you don’t!)
- 1 tsp. bicarbonate of soda
- 2 eggs
- 250 mL milk (– I used full fat, normally I use semi-skimmed, but I had some full fat to use up)
