Description
Classic chiles rellenos, or “stuffed chiles,” from the state of Puebla in Mexico, are a labor of love, filled, battered, fried, and served with a homemade salsa. This oven-baked version delivers a flavor-packed casserole in a fraction of the time — with no frying needed. The key ingredient is fresh poblano chiles, a dark green, meaty textured chile with rich flavor and mild to medium heat. Look for the shiny, square-shouldered chiles, as well as salty and crumbly cotija cheese, at grocery stores and Latino markets, and pick up your favorite store-bought salsa for serving. The recipe is a Yummly original created by Angela Brassinga.
Ingredients
- nonstick cooking spray (or a little oil)
- 8 fresh poblano chiles (2 to 2 1/4 lb. total)
- 1 1/2 cups shredded Monterey Jack cheese (divided)
- 1 cup Cotija cheese (crumbled; or grated Parmesan)
- 2 tsp. dried oregano (Mexican oregano, if available)
- 12 large eggs
- 1/3 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt

Directions
- Preheat broiler with top rack 4-5 inches from the heating element, so that tops of chiles will be about 2 inches from it. Oil a 9x13-inch baking dish with cooking spray and set aside. Place chiles in a rimmed sheet pan.
- Broil chiles, turning them as needed, until they’re blistered and black all over, 10-12 minutes total. As they’re done, transfer them to a large heatproof bowl and cover with a plate or aluminum foil. Let chiles stand, covered, for 15 minutes to loosen the skins.
- Meanwhile, preheat oven to 375°F with a rack set in the center.
