- 1 Tbsp. olive oil
- 15 oz. chick peas (drained and rinsed well)
- 7 artichoke hearts (drained and sliced lengthwise, canned or frozen both work fine. I like to rinse the canned ones.)
- 1/4 cup sliced almonds (toasted if desired)
- 1 tsp. lemon juice (I used more to taste)
- 1/4 tsp. salt
- 2 Tbsp. chopped parsley (fresh, I used 1 teaspoon dried)
