- vegetable oil (to fill the bottom of your wok or fry pan to about 1 inch depth)
- 1 head cauliflower (or equivalent broccoflower, cored and cut into small florets)
- 1 cumin seeds (scant t)
- 1 onion (small-medium, diced)
- salt (to taste)
- 2 inches ginger (piece, peeled and minced, I had to sub pickled baby ginger, rinsed, and it actually worked great)
- 6 cloves garlic
- 1/2 hot chile pepper (fresh, minced, optional, I always leave out bc of Alex)
- 2 tsp. ground cumin
- 2 tsp. garam masala
- 1/2 tsp. cayenne pepper (or paprika, to heat preference)
- 2/3 cup plain yogurt (whole fat, preferably Greek yogurt or similarly thickened/strained)
- 1 bell pepper (sweet, finely chopped, can use green, but I like sweeter colored ones)
- 4 tomatoes (small, finely chopped, I used frozen from last summer)
- 2 Tbsp. chopped cilantro (fresh)
- 1 cup basmati rice (rinsed thoroughly and soaked for 30 minutes)
- 1 1/2 cups lentil (de puy, or some other lentil which holds its shape when cooked)
- 1 pinch turmeric
- 1 pinch paprika (or cayenne)
- 1 pinch ground cumin
- 4 whole onions (thinly sliced)
- 2 Tbsp. vegetable oil
- 1 tsp. mustard seeds (dark, could sub cumin seeds)
- salt (to taste)

Made this again- deeeelicious. I subbed fenugreek seeds for the cumin seeds and didn't make the lentil portion, due to time constraints.

Good base flavoring ~ After it'd cooled down a bit, I think it lacks salt. I added the peppers- nice spice!
