- 2 Tbsp. olive oil
- 1 large shallot (roughly chopped)
- 4 cloves garlic (chopped)
- 1/8 tsp. crushed red pepper flakes
- 1/2 cup dry white wine (Sauvignon Blanc is great here!)
- 1 Tbsp. fresh lemon juice

- 16 oz. potato gnocchi (or my favorite homemade potato gnocchi recipe)
- 2 Tbsp. olive oil
- 1 large yellow onion (diced)
- 1 Tbsp. fresh thyme (or 1 teaspoon dried thyme)
- 1 1/2 lb. chanterelle mushrooms (roughly chopped)
