- 4 Tbsp. fat (friendly, to cook in I prefer the flavor of a combo of butter and olive oil. Ghee is lovely too.)
- 2 leeks (large, ends and green tips removed, sliced into rounds and rinsed of sand, Use the white and light green part. If you don’t have leeks 1 medium onion or a couple shallots would work well.)
- 3 cloves garlic (peeled, no need to chop – it will all get blended up in the end)
- 2 bunches asparagus (woody ends removed and coarsely chopped)
- 1 yellow potato (small/medium, cubed)
- 1 1/2 qt. bone broth
- 1 tsp. dried dill (if you have access fresh use about 2-3 tbsp)
- 1/4 cup coconut yogurt (full fat, regular yogurt, crème fraiche, or sour cream, you can use raw milk or coconut milk if you don’t have these, but the tang of the fermented creams is lovely)
- 1/2 lemon (juice of, use about 1 tbsp)
