- 200 grams sea salt flakes
- 30 grams glutinous rice flour
- 30 grams dried kelp (kombu, sheets)
- 200 grams gochugaru (or to taste)
- 2 tsp. chili flakes (dried red, or to taste)
- 1/2 Tbsp. tamari (or other gluten-free soya sauce, leave out for soya free)
- 50 grams ginger (freshly grated)
- 400 grams radishes (1 daikon/ Korean, peeled and cut into 6 centimetre match sticks/ julienne )
- 2 apples (medium - peeled, cored and cut into 6 centimetre match sticks/ julienne)
