- pie crust (Just use my, recipe here. Or your favorite vegan & gluten free pie crust from the frozen section. Whatever.)
- 2 cups milk & cream (coconut, so refrigerate the cans overnight and scoop out the heavy cream that comes to the top)
- 3/4 cup lemon juice (about 4 large lemons)
- 1/4 cup maple syrup (or ½ cup sugar)
- 3 Tbsp. cornstarch
- 1 pinch salt
- 2 Tbsp. lemon zest
- meringue
- 3/4 cup juice (bean, I used light red kidney beans, but you can use anything)
- 1/4 tsp. cream of tartar
- 1 tsp. vanilla
- 1/2 cup granulated sugar
