  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups brown rice flour
  • 3/4 cup oat flour
  • 2 tablespoons cornstarch
  • 1 1/2 teaspoons cinnamon
  • 1/8 teaspoon nutmeg (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup raisins (optional)
  • 1/4 cup walnuts (finely chopped; optional)

    Directions

    1. Preheat the oven to 350°F.
    2. Spray a 9x5-inch loaf pan with nonstick cooking spray. Set aside.
    3. Place the zucchini in a large mixing bowl and blot with paper towels to remove some of the moisture. Add the canola oil, brown sugar, granulated sugar, sour cream, eggs, and vanilla extract. Whisk vigorously until smooth and combined.
