- 50 grams tapioca starch
- 1 1/2 tsp. gluten (baking powder, free)
- 1/2 tsp. bicarbonate of soda
- 1/2 tsp. fine sea salt
- 1 1/4 tsp. xanthan gum
- 2 large eggs (room temperature UK large, Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’)
- 3 Tbsp. almond milk (or rice or soya milk)
- 250 mL yoghurt (dairy free, eg. soya yoghurt)
- 60 mL sunflower oil
- 1 tsp. cider vinegar
- 1/2 tsp. honey
- sesame seeds (to sprinkle on top)
