- 1 tsp. vanilla extract
- 1 lemon (medium)
- 1 cup gluten free all purpose baking mix (**, we used King Arthur Flour gluten free all purpose baking mix)
- 1/8 tsp. baking soda
- 3 Tbsp. fresh squeezed lemon juice
- 1 Tbsp. rice milk (or other dairy free milk)
- 3/4 cup sorghum flour (OR brown rice flour)
- 1/8 tsp. food color (sunflower yellow McCormick natural, powder, optional)
- 1/2 cup white chocolate chips (allergy friendly, we like the Great Value allergy friendly white chocolate chips)
