- 1 cup butter
- 1/2 palm shortening
- 3/4 cup organic sugar (I use part stevia to replace some of the sugar)
- 1/4 cup applesauce (or 1 egg)
- 2 tsp. pure vanilla extract
- 1/2 tsp. lemon extract (you can also use almond, maple or any other flavor, or omit completely)
- 3/4 cup tapioca starch (or any starch, plus additional for rolling if necessary)
- 1/2 cup sorghum flour
- 1/2 cup brown rice flour
- 1/2 cup rice flour (or sweet rice, or cassava)
- 1 tsp. guar gum (or xantham gum)
- 1/4 tsp. sea salt
- 1/4 tsp. baking powder
- 1 Tbsp. butter (or vegan butter)
- 1 cup powdered sugar (organic, see my corn free powdered sugar post for options)
- 1/2 tsp. vanilla
- 1 Tbsp. non dairy milk (1 teaspoon at a time, it thins quickly)
