- 120 grams gluten free flour blend (plain, sifted – I used GFA blend A – See NOTES)
- 1 pinch fine sea salt
- 1/4 tsp. xanthan gum (– OPTIONAL ➔ If using GFA Blend A flour, this isn't really needed, but for some more rice-based flours, it will be necessary to provide greater structure.)
- 50 grams unsalted butter (or dairy free alternative melted)
- 130 grams caster sugar (white, super-fine sugar)
- 4 large eggs (UK large, Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’)

- 2 Tbsp. pistachio nuts (– chopped)
