- 8 Tbsp. unsalted butter (melted and cooled)
- 2 eggs (100 g, weighed out of shell, at room temperature)
- 3/4 cup granulated sugar
- 2 cups all purpose gluten free flour (I used Better Batter)
- 1 tsp. xanthan gum (omit if your blend already contains it)
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 3/4 tsp. kosher salt
- 1/4 tsp. ground cinnamon
- 1/2 cup coconut chips (or chopped raw pecans or walnuts)
