- 150 grams gluten (active, free sourdough starter, it should be at peak rise and super bubbly, see Notes)
- 100 grams filtered water
- 80 grams superfine brown rice flour
- 20 grams psyllium husk (the whole husks, not psyllium husk powder)
- 20 grams maple syrup (or honey)
- 300 grams filtered water
- 15 grams olive oil (optional, helps soften the crust slightly)
- flour (Mix, see Notes for options)
- 80 grams potato starch (not potato flour!)
- 60 grams tapioca flour (or arrowroot flour)
- 80 grams sorghum flour
- 80 grams superfine brown rice flour (if you’re having issues with gumminess, use the higher amount of flour)
- 12 grams sea salt
