- 55 grams gram flour (chickpea flour/garbanzo flour)
- 1 tsp. xanthan gum
- 1/2 tsp. gluten (baking powder, free)
- 1/2 tsp. fine sea salt
- 55 grams unsalted butter (cold and cubed)
- 55 grams lard (Trex/, cold and cubed)
- 1 large egg (UK large)
- 2 1/2 Tbsp. cold water
