- 18 oz. salmon ( , wild, caught, Alaskan)
- 1/2 cup yellow onion (finely chopped, sweet)
- 2 large eggs
- 3/4 tsp. garlic powder
- 1 tsp. dill weed
- 1 tsp. celery seeds
- 1 tsp. Old Bay Seasoning
- 1/2 tsp. salt
- 1 pinch cayenne pepper (optional)
- pepper (To Taste:, , black)
- 2 tsp. Worcestershire sauce (Lea and Perrins, gluten-free in the U.S. but the product sold in England or sourced from England)
- 1/2 cup gluten free panko crumbs (OR your favorite gluten-free crackers finely crushed, divide crumbs, half goes into the salmon mixture and half is used to coat the croquettes before frying)
- 1/4 cup coconut (unsweetened, finely grated, if you don't have coconut, or prefer not to use it, substitute by adding 1/4 cup gluten-free Panko crumbs or crushed gluten-free crackers for the coconut used to coat the salmon croquettes before frying)
- 3 Tbsp. olive oil (for pan frying)
- lime mayonnaise (Homemade)
- 4 Tbsp. mayonnaise
- 2 lime wedges
