- 1 cup panko style gluten free bread crumbs (Kinnikinnick)
- 3 large eggs (lightly beaten)
- 1 cup frozen corn (thawed)
- 2.5 oz. sliced black olives
- 3 scallions (green onions green and white part, thinly sliced)
- 2 tsp. Old Bay Seasoning (if you don’t have Old Bay Seasoning, than season with salt, pepper, paprika and a few dashes of hot sauce)
- 4 Tbsp. cooking oil
- 6 oz. greek yogurt (full, low or non-fat)
- 1 Tbsp. fresh dill (minced)
- 1 clove garlic (minced or grated)
- 1/2 lemon
- salt (and pepper)
- 1 cup mayonnaise
- 1/4 cup pickle relish (sweet)
- 1 lemon
