- 3/4 tsp. xanthan gum (omit if your blend already contains it)
- 1/4 tsp. baking powder
- 1/4 tsp. kosher salt
- 6 Tbsp. unsalted butter (roughly chopped and chilled)
- 1/2 cup cold water (iced, ice cubes do not count in volume measurement)
- 1 1/2 Tbsp. powdered gelatin (unflavored)
- 3 Tbsp. water
- 1/2 cup gluten free flour blend (47 grams superfine white rice flour + 15 grams potato starch + 8 grams tapioca starch/flour)
- 1/2 cup sugar
- 1/8 tsp. kosher salt
- 2 1/4 cups milk
- 1 1/2 cups soda (root beer)
- 5 egg yolks (125 g total, at room temperature)
- 2 Tbsp. unsalted butter (chopped)
- 2 tsp. pure vanilla extract
- 3/4 cup heavy whipping cream (chilled)
- 1/4 cup confectioners sugar
- maraschino cherries (for serving, optional)
