- 1/4 cup sunflower oil (or other neutral vegetable oil)
- 1 large egg
- 1/4 cup beet (purée, see headnote)
- 1/4 cup cultured buttermilk (well-shaken)
- 2 tsp. fresh lemon juice (strained)
- 3/4 tsp. vinegar (neutral, such as apple cider or rice)
- 1/2 tsp. vanilla extract
- 1/4 cup teff flour (ivory, I use Maskal Teff brand; see note for substitution suggestions)
- 1/4 cup sweet rice flour (such as Bob’s Red Mill or Mochiko)
- 1/4 cup oat flour (such as Bob’s Red Mill)
- 2 Tbsp. Dutch process cocoa powder (look for alkali in the ingredients list)
- 3/4 tsp. baking powder
- 1/8 tsp. baking soda
- 1/4 tsp. fine sea salt
- 1 cream cheese frosting (recipe)
- 1 1/2 tsp. beet powder (sifted if lumpy, divided use)
