- 1/3 cup light olive oil
- 2 eggs (free range organic, beaten, or Ener-G Egg Replacer whisked with 1/4 cup warm water for vegan)
- 1 Tbsp. bourbon vanilla extract
- 1/4 tsp. lemon juice
- 1/2 cup vanilla almond milk (or coconut milk)
- 1/2 cup chopped pecans (roughly, or walnuts, or raisins, or chocolate chips, as you prefer)
