- 1 tsp. xanthan gum (omit if your blend already contains it)
- 3/4 tsp. kosher salt
- 4 Tbsp. unsalted butter (diced and kept cold)
- 3/4 cup cold water (iced, ice doesn’t count in volume measurement, plus more as necessary)
- 4 Tbsp. all purpose gluten free flour
- 16 Tbsp. unsalted butter (cold)
