- 1/4 cup muscovado sugar (light, light brown sugar works also)
- 3 Tbsp. turbinado sugar
- 1 tsp. baking powder
- 1/2 tsp. ground cinnamon (optional)
- 1/4 tsp. salt
- 1/4 tsp. xanthum gum
- 5 Tbsp. coconut oil (melted)
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 yolk
- 1 tsp. pure vanilla extract
- 1/2 tsp. almond extract
- 3 pluots (medium, any variety works; I used Dapple Dandy and Amigo pluots)
- ice cream (for serving, optional)
